Pork in soy-honey marinade in the oven

The marinade in this recipe is universal. I cook both meat and poultry with it. When baked, the aromatic mixture turns into a crispy, glossy crust. Mmmm... You'll lick your fingers! And it always turns out spicy, original and very appetizing. What else do you need to have a delicious New Year?!

How to cook pork in soy-honey glaze:

Wash the meat well and remove excess fat. Cut into small pieces or leave whole. Dry with paper towels.

Peel the garlic and chop finely. Or just put it through a crusher.

Pour soy sauce into a bowl. Add garlic.

Add honey. Stir. Many chefs advise adding artificial “bee gold”. Because a natural product becomes harmful when heated. So far no one has proven whether this is true or not. I used natural, homemade, very tasty and aromatic. By the way, don’t be afraid that the dish will turn out sweet. The soy sauce offsets the honey and makes the glaze savory. Just what you need to surprise guests at a New Year's party.

Transfer the meat to a deep bowl and pour over the marinade. Spread the flavor mixture evenly. Marinate for 2-8 hours in a cool place. Or leave at room temperature for an hour, covered with a lid or film. To prepare pork exactly for the New Year using this recipe, do not forget to take this time into account.

Heat odorless vegetable oil. You won't need a lot of it, because the meat itself is quite fatty. Place the marinated pieces on the frying pan. The fire should be moderately strong. Our task at this stage is not to cook the pork, but only to make a crispy crust so that all the juice is “sealed” inside. Therefore, frying for 1-2 minutes will be enough. The honey and soy sauce marinade will form a shiny glaze.

Carefully turn the meat over and fry the second side until golden brown.

Transfer to a baking dish. Place in a preheated oven. Cook for 20-40 minutes depending on the size of the piece(s). Check readiness with a probe thermometer or piercing. In the first case, the temperature inside the pork should be 70-75 degrees. With the second method, clear juice should come out from the middle.

Serve the finished juicy pork in a shiny “varnish” glaze on the New Year’s table immediately, before it has time to cool.

Pork rolls with mushroom filling

“Rulets are so simple! For the New Year it’s better to prepare something more original,” many of you may think. But there is no need to make hasty conclusions. Simplicity in this case is only beneficial. After all, the simpler and faster a dish is prepared, the more time you will have for yourself. Moreover, the apparent ordinariness is more than compensated for by the incomparable taste and appetizing appearance. Let's try?

How to cook pork rolls for the New Year:

For the filling, I used simple and long-familiar champignons. But I can imagine how fragrant the filling will be if it is made from wild mushrooms. But, of course, they must first be boiled before frying. It’s better to drain the water at least once after boiling. Just peel the champignons and cut them into small cubes. Place in a dry frying pan. Simmer the mushroom slices over medium heat until the liquid evaporates. Stir to avoid burning. At the same time, you can set the eggs to boil.

Add finely diced onion. Stir and add vegetable oil. It should be disordored so as not to drown out the aroma of the filling.

When the onions and mushrooms are fried until soft and golden, add chopped garlic and pepper. Add some salt. Put in butter. Stir. When the butter melts, you can turn off the heat and cool the contents of the pan. By the time the rolls are prepared, the filling should not be hot, because you don’t want to celebrate the New Year with a burn.

Place hard-boiled eggs in ice water. when they have cooled, peel and cut into small cubes. Or grate on a coarse grater. Add to onions and mushrooms. Stir. If the filling seems a little dry, add a little sour cream or mayonnaise.

Cut the pork across the grain into slices about 2 cm thick. Beat it through cling film with a kitchen hammer so as not to tear the fibers. Rub with pepper and salt on both sides.

Place some filling on one edge.

Roll into a neat roll. Pin the edges with toothpicks or tie the “structure” with cooking thread.

Heat some oil in a frying pan. Place the rolls and fry over moderately high heat on all sides until golden brown.

Place the snack in a heatproof dish. Preheat the oven to 180-200 degrees.

Bake the rolls for 15-25 minutes (depending on thickness) and immediately serve to the New Year's table with your favorite sauce and fresh herbs.

Baked pork with pineapples

Are you afraid of drying out your meat? Take note of this recipe. The pork turns out juicy and tender, no matter what part of the carcass you bake. Therefore, you don’t have to risk it, but still drink champagne while eating the remaining pineapples! This sweet and sour exotic fruit complements the taste of meat. And the cheese crust, like a cherry on the cake, completes the delicious composition.

How to cook baked pork with pineapples:

Cut the meat into portions across the grain. I had a neck, so the dish turned out very juicy. But it will be no less tasty with tenderloin, I’m sure. The thickness of the plates should be no more than 2-3 cm.

Beat well, wrapping it in food grade polyethylene. Sprinkle with salt and pepper. Massage so that the spices are better absorbed. You can add other spices to this minimal set. For example, rosemary, herbs de Provence, a little ginger and thyme.

Grease a baking sheet with a thin layer of oil. Place chops.

Place a pineapple ring on each piece of meat. Are the fruits already cut in production? Distribute about 1-2 tablespoons of pineapple cubes evenly.

Pork shish kebab on skewers in the oven

On New Year's Day (especially if the weather is "non-flying") only extreme sports enthusiasts, true lovers of such recreation or happy owners of country houses who have the opportunity to hide in the warm "inside" of their "fortress" go out into nature. Most people prefer to celebrate the next year in a cozy apartment or private house near a cheerfully idle TV and a decorated Christmas tree. Method for preparing pork shish kebab for the New Year:

Wash the meat. Dry and cut into small pieces.

Prepare the marinade. It turns out moderately piquant and not as greasy as with mayonnaise. You can also use your favorite recipe for aromatic mixture for marinating meat, I do not insist. Mix mustard (choose the spiciness to your taste), pressed garlic, sour cream, salt and pepper. Stir.

Spread evenly over pork. Marinate for 2 to 24 hours in a cool place.

Place the meat pieces on wooden skewers. To prevent them from burning, you can soak them overnight in cold, clean water.

After greasing the frying pan with a small amount of vegetable fat, fry the pork skewers over high heat until golden brown. Then transfer to a baking sheet or ovenproof dish. Place in preheated oven. Cook for another 20-30 minutes at 180 degrees. Is there top heating? You can turn it on too. But do not dry out the meat; check its readiness periodically.

Transfer the finished pork to a “ceremonial” dish and serve, sprinkled with herbs. By the way, between the pieces of meat you can thread a wide ring of onion, a slice of tomato or a small champignon.

On the eve of the New Year 2020, we are all putting together a holiday menu, trying to fill it with interesting and tasty dishes that we can surprise our loved ones with. A special place in this list is occupied by dishes made from meat. The incomparable taste of aromatic meat dishes will not leave anyone present indifferent. And today’s article is about meat for the New Year’s table. Beef balls

In the old days, meatballs were an exquisite delicacy; young, tender meat was beaten almost to the fibers, and then formed into round cutlets. The modern recipe for meat balls occupies an intermediate position; it is no longer a chopped steak, but also not a classic cutlet. As before, they are made round from the best meat, and always served with sauce. Very often, meatballs are included in dietary nutrition, and recipes without hot herbs and spices are even included in medicinal foods.

To prepare the meatballs you will need:

  • 500 g beef pulp;
  • spices;
  • egg;
  • 100 ml milk;
  • 2 tbsp. l. flour;
  • vegetable oil;
  • 50 ml apple juice;
  • bouillon cube.

How to cook:

  1. Cut the beef and grind it with a meat grinder. Season to taste with salt and curry, about half a teaspoon each; curry can be replaced with a spoon of prepared mustard. Add 1 spoon of flour and stir.
  2. Beat the egg a little, mix with the minced meat, add a tablespoon of milk.
  3. Form round balls 2 cm high. Fry in oil until a crust appears, 5 minutes, close, place in the oven for 15 minutes. Add oil if necessary.
  4. For the apple sauce, stir the second spoon of flour into the remaining milk, pour in the juice and pour out the bouillon cube broken into small pieces, boil and simmer over low heat for 5-6 minutes.
  5. Place 2 meatballs on each plate, serve rice as a side dish and pour over the sauce.

For dietary/therapeutic nutrition, it is useful to chop the minced meat 2 times, then the meatballs will be more tender, and also exclude curry and mustard from the minced meat, but add finely chopped dill and celery. After frying, pour a little hot water into the frying pan with the meatballs so that the crust steams in the oven and becomes soft. And instead of a bouillon cube, pour a couple of spoons of real broth into the sauce and add fresh herbs, you can add chopped garlic and stewed onions.

The topic of how to cook a traditional steak is very popular among chefs all over the world. And this is not surprising, because there are a lot of secrets and tricks here. To begin with, the right choice of meat is important. It should be a flat piece of beef, the thickness of which will not exceed five cm. It is best to choose one with small layers of fat - they will give the dish a unique juiciness. The piece must be cut across the grain. If it seems to you that everything is so easy, and all that remains is to fry the meat, then you are very mistaken.

How to cook steak next? If you want to do everything according to the rules, then refuse the microwave, frying pan or oven. The classic recipe calls for open heat. How can I get it? Using a grill, barbecue or a special oven - a josper. The latest device runs on natural charcoal. If you can’t get one, or the other, or the third, then try using a frying pan with a ribbed bottom. If you are lucky and can choose good meat, the dish will still turn out to be incomparably tasty.

A piece of beef has been bought and the fire has been prepared - how to cook a steak after that? If you purchased frozen meat, it must be completely defrosted. After that, warm and dry at room temperature. Next, the piece must be cut into portions, salt and pepper to taste and fry on both sides. Remember that meat should not be beaten under any circumstances. If you are using a frying pan, its surface should be as hot as possible. Take your time and do not place the beef on it until it reaches its highest temperature. Otherwise, all the juices will leak out of the meat and it will be spoiled. Fry the pieces for no more than fifteen minutes. But here it all depends on your taste, maybe you prefer meat with blood? Now you know how to cook steak, and, no doubt, you will often treat yourself and your loved ones to this wonderful dish.

Escalope with tomato and cheese (or lemon)

Ingredients:

  • pork – 1 kg;
  • hard cheese – 300 gr. (or one lemon);
  • sunflower oil;
  • salt;
  • tomato;
  • pepper.

Cooking method:

  • The meat must be cut into small steaks, about 3-5 cm thick. Beat lightly, add salt and pepper to taste, and then fry in vegetable oil for 15-20 minutes. When the steaks are golden brown, place them on a sheet.
  • Cut the tomato into thin pieces, grate the hard cheese on a fine grater. Place a slice of tomato on each steak and sprinkle cheese on top.
  • Preheat the oven to 200 degrees and place a sheet of steaks in it. Cook for 10 minutes.
  • Instead of hard cheese and tomatoes, you can use lemon, the cooking method is the same. The meat acquires a rather original taste thanks to lemon juice.

Pork fingers with mushrooms

Ingredients:

  • pork fillet – 1 kg;
  • fresh champignons – 300 gr.;
  • vegetable oil;
  • meat broth;
  • flour;
  • salt;
  • pepper.

Cooking method:

  • Wash the pork thoroughly in cold water, then cut into small pieces, about 1 cm thick. Beat well (this will give the meat juiciness), add salt and pepper.
  • Peel the onion, chop and fry in sunflower oil. Cut the champignons into small pieces and add to the onion. Salt and pepper. You can add spices: mushroom seasoning, coriander or basil.
  • Place the resulting filling on each chop, then roll it up and secure it with a toothpick. Next, roll each roll in flour and fry in vegetable oil over low heat.

Now place the fingers in a saucepan with meat broth and simmer for about 5-7 minutes. This step can be omitted, but in this case the meat rolls may turn out too dry.

Homemade kebab

Ingredients:

  • pork or chicken fillet - 1 kg;
  • vinegar;
  • dill;
  • vegetable oil;
  • salt;
  • pepper.

Cooking method:

  • Cut the meat into small cubes, then fry in sunflower oil, adding salt and pepper.
  • Cut the onion into rings, place in a bowl and pour vinegar over it. Leave to marinate for 20-25 minutes, then rinse with water.
  • Thread the meat onto wooden skewers and place in a roasting pan with the meat broth (alternatively, you can use plain boiled water). You can also add tomatoes or mushrooms to the skewers between the pieces of meat.
  • Place pickled onions and pre-chopped dill on top of the kebab. Simmer for 20 minutes.
  • The kebab turns out very tender and juicy, thanks to stewing in the broth. Dill adds incredible aroma and taste to the dish.
  • The meat is served hot, along with gravy.
