Healthy meatballs from the oven

Oven-baked meatballs fall into the category of more preferable dishes than pan-fried delicacies. The step-by-step recipes for their preparation do not include such heat treatment. Therefore, this food can be given even to children. In addition, preparing meatballs baked in the oven takes a minimum of time and effort. And the process itself is simple and understandable, even for novice housewives.

With sauce and rice

Let's prepare meatballs baked in the oven with sauce. We will need a frying pan, but not for frying the semi-finished meat products themselves, but for preparing a tasty and aromatic sauce.

Ingredients for the dish:

  • minced meat - 500 grams;
  • chicken egg - 1 piece;
  • raw rice, washed - 100 grams;
  • onions - 2 pieces;
  • one large carrot;
  • sour cream - 1 large spoon;
  • tomato - 1 tablespoon;
  • a tablespoon of flour;
  • garlic - to taste;
  • lean oil - 2-3 tablespoons;
  • sugar and salt - to taste;
  • ground pepper and bay leaf.

Cooking process

Prepare meatballs with rice, baked in the oven with sauce, as follows:

  1. Pre-boil the rice until half cooked and rinse in cold water using running water and a colander.
  2. Free the onion (one) from everything inedible and finely chop it.
  3. Add the egg, salt and pepper to the minced meat, and don’t forget about the garlic, passed through a press. Mix thoroughly and thoroughly beat the semi-finished meat product.
  4. When the rice has cooled, mix it with minced meat and onions.
  5. From the resulting mass we form meatballs and place them in a non-stick pan lined with special baking paper. If there is no such paper, it is quite acceptable to generously grease the bottom of the mold and place the products for further preparation.

We set the oven to 200 degrees and send our meatballs there for 25 minutes. Do not forget to monitor the products throughout the entire period.

Sauce for the dish

Prepare the sauce to get wonderful meatballs baked in the oven in gravy. The gravy will add tenderness and beauty to the dish. We follow all the rules of step-by-step preparation:

  1. Peel the second onion and cut it as desired.
  2. We wash the carrots, dry them and grate them on a coarse grater.
  3. Pour two tablespoons of vegetable oil into a frying pan and fry the prepared vegetables over medium heat.
  4. In a separate bowl, mix sour cream with tomato and flour. We do this carefully, avoiding the appearance of lumps.
  5. Add boiled water (1 glass or more) to the bowl, your preference will be the main factor here. If you want a thin gravy, take more water. Making a thicker sauce does not require additional liquid.

Pour the resulting mixture into a frying pan and cook for five to eight minutes over low heat. Don't forget to salt the sauce.

The final stage of preparation

We remove the meatballs from the oven, which have been successfully baked for 25 minutes, pour the resulting sauce over them, and send them back into the bowels of the oven. Bake the meatballs in the oven until fully cooked for another 25 minutes. After the specified time, we remove the baking sheet with a wonderful, aromatic and satisfying dish and begin tasting.

We form a batch of meatballs and send them to a non-stick pan, greased with oil. Set the oven temperature to 200 degrees and cook the resulting chicken balls for at least ten minutes.

Meanwhile, we need to mix the ingredients for the sauce. Combine sour cream and water in a deep bowl, add your favorite spices and salt. After ten minutes, remove the pan with the baked chicken balls, fill them with sauce, sprinkle with cheese shavings, and put them back in the oven.

We note the time: twenty minutes after placing them in the oven again, the chicken meatballs are ready.

Fans of cheese dishes will also appreciate this recipe. Cooking such a dish is a pleasure, this recipe is so easy to follow. Meatballs can be served as an independent dish, without a side dish, or with mashed potatoes, rice and pasta.

For this recipe for oven-baked meatballs, you will need the following ingredients:

  • Minced meat - half a kilogram. It can be beef-pork or chicken-pork.
  • Raw chicken egg - 1 piece.
  • One onion.
  • White loaf - 100 grams.

Step-by-step preparation of a dish

Mix the minced meat with salt, pepper, and finely chopped onion. Add raw egg and prepared garlic to the mixture.

Immerse the loaf slices in milk, after a minute squeeze out the excess liquid and place the bread in the minced meat mixture. We diligently knead the resulting minced meat and beat it no less diligently.

With wet hands we begin to form large meatballs. Place a cube of cheese inside each product.

Let's grease the form in which we will bake our meatballs with vegetable oil.

In a separate deep plate (or other suitable container), mix sour cream with tomato. Add boiled cold water in small portions and mix the mixture thoroughly each time. Season with salt and pepper, if necessary, to create a sour cream sauce.

Pour sauce over all the meatballs and place in the oven, preheated to 180 degrees. The baking time of the dish should be at least 35-40 minutes. Now our fragrant and tender meat balls are ready. It is better to serve the dish immediately, hot, with or without a side dish.

Meatballs in the oven (in milk)

The dish turns out juicy and is perfect for baby food. The delicacy is also suitable for dietary purposes, due to the fact that the meatballs do not contain tomato paste, various fried foods and tomatoes. Choose minced meat according to your own taste: chicken, beef or pork - all these types have proven themselves to be the best.

Ingredients for the dish:

  • For five hundred grams of any minced meat.
  • 1 liter of milk.
  • Half a glass of uncooked rice.
  • The egg is raw.
  • Pepper and salt to taste.

Cooking meatballs in the oven

We pass the meat through a meat grinder twice. Add salt and pepper to the mixture. We introduce the raw egg into the minced meat and beat the semi-finished product.

Wash the rice grains until the water is clear and cook until half cooked. Cool the porridge. After the rice has cooled, mix it in a deep bowl with the minced meat. The mass for forming meatballs is completely ready for the next stage of the process.

With wet hands we take portions of minced meat and form them into balls - future meatballs. Take out a good non-stick pan and grease it generously with oil. Place the meatballs at some distance from each other. Fill the meat balls with milk. The liquid should cover the minced meatballs almost completely.

We preheat the cabinet to 180 degrees and place the prepared semi-finished products in milk inside. How long to bake meatballs in the oven? Approximately 30-35 minutes. But do not rush to remove the pan with the finished dish and keep it in the oven for another half hour, turning off the cabinet and without opening the door. During this time, the meatballs will absorb the remaining amount of milk and cool slightly. Now they can be served for lunch (or dinner). Tasty, juicy and tender aromatic meat balls will appeal to the whole family, and household members will demand more.

With mushrooms

And here is another very appetizing recipe for meatballs baked in the oven with mushrooms and vegetables. We will need products:

  • meat - 1 kilogram;
  • onion;
  • 70 grams of semi-cooked rice;
  • egg - 1 piece;
  • 2 cloves of garlic;
  • seasonings and salt.

Cooking technology:

Make minced meat: pass the meat product through a meat grinder and add rice, chopped onion, salt, spices and egg. Mix everything thoroughly, turning it into a homogeneous mass.

We prepare the sauce from the following products:

  • 300-400 grams of any mushrooms;
  • carrots - 2 pieces;
  • onion - 1 piece;
  • sour cream product - 3 large spoons (fat content is not important);
  • tomato or ketchup - 3 tablespoons;
  • broth or water - half a liter;
  • mushroom seasoning;
  • flour - for breading products;
  • vegetable oil.

Cooking:

Make meat balls no larger than a walnut. Roll the products in flour. Pour a small amount of vegetable oil into the mold, place all the prepared products in it, and place in a preheated oven for 7 minutes. After this time, remove the baking sheet with meatballs, turn the products over to the other side and place them back in the oven. After another seven minutes, both sides should be golden brown.

We prepare the sauce while our meatballs are fried in the oven. Cut the mushrooms (fresh) into 4-6 segments. We do not cut them too finely, as they shrink greatly in size after cooking.

Pour three tablespoons of vegetable oil into a frying pan and fry the onions until golden. Add grated or finely diced carrots. Cook the vegetables over low heat for about five minutes. Add the mushrooms and fry all the ingredients for another ten minutes.

Add sour cream and tomato sauce. Pour in the broth, salt and pepper. Sprinkle with seasonings. Mix our mushroom sauce thoroughly and wait until it starts to boil.

Place half of the prepared mushroom sauce in a heat-resistant dish. Place meatballs on top. Cover them with the second half of the sauce and cover the pan with foil.

Place the prepared pan with meatballs in the oven. Bake the meatballs at 200 degrees for half an hour. As soon as 30 minutes have passed, the dish is completely ready!

Cooking meatballs in the oven is much easier than you might think at first glance! First of all, it’s probably worth saying that meatballs are ordinary cutlets that are prepared from minced meat with the addition of various additional ingredients: boiled cereals, vegetables, spices, etc. Cooking meatballs in the oven has an undeniable advantage, which is that we are spared the need, in most cases, to pre-fry the meatballs in a frying pan, and can immediately send them in the oven to bake in the form.

To prepare meatballs, a variety of types of minced meat are used: pork, beef, fish, chicken. The latter is perfect in cases where you are pursuing the goal of preparing a dietary dish.

The sauce with which you will pour the meat balls plays an important role. You can choose either a milder sauce - creamy, or a spicy one - tomato, with the addition of your favorite spices.

If you prefer meat dishes that seem to melt in your mouth, then achieving this effect with meatballs is quite simple, just cover the pan with foil.

Meatballs are a dish that, without a doubt, deserves to be on your table at least once a month. Like, it consists of simple and understandable products, and preparing it is not difficult. Some call them meat balls, others hedgehogs, but the essence remains the same - this is a tasty, satisfying second dish that children really like, but adults don’t mind having lunch with this dish either.

Today I want to dedicate this article to oven-cooked meatballs and gravy. I like this method because it is faster and easier. You can use absolutely any minced meat, even fish.

The gravy plays a very important role here. It makes our balls juicy, tender and flavorful. Each of the sauces, be it based on tomatoes or sour cream, or any other product, imbues the dish with its taste, revealing it even more, combining with other ingredients.

Delicious meatballs in the oven with gravy

Milk-based gravy is a great solution when you don't have cream at home. It will replace them, no one will even suspect a substitution. The sauce is very aromatic and rich. It goes perfectly with minced chicken meatballs.

Semolina in the meat balls will make them even more tender and soft. But if for some reason you don’t want to add this grain, then don’t worry, the meatballs won’t fall apart without it, but will be just as round and neat.

We will need:

  • minced meat – 500 g (I used chicken);
  • onions – 1 pc.;
  • egg – 1 pc.;
  • greenery;
  • semolina – 2 tablespoons;
  • garlic – 3 cloves;
  • milk – 250 ml;
  • any frozen or fresh vegetables;
  • salt, pepper to taste;
  • Bay leaf.

Preparation:

  1. Peel and chop the onions.

I grate it so that the dish becomes juicier, but at the same time the onion itself is not noticeable in it.

How to cook meatballs without rice in creamy sauce?

You get incredible deliciousness if you bake meatballs in cream. And if you also sprinkle them with grated cheese, then it’s pure bliss. The rich milk-cheese aroma will fill your home, and no one will simply be able to resist it.

By the way, in this recipe I did not grind the meat, but decided to finely chop it with a knife. Due to this, the consistency of my meat balls turned out to be denser, the meat in them can be felt well. When you don’t have a meat grinder at hand or are simply too lazy to use it for just one small piece of meat, then do as I do :)

We will need:

  • chicken breast – 1 pc.;
  • onions – 1 pc.;
  • egg – 1 pc;

Meatballs with potatoes in cream

Very often, various fillers are added to meatballs, for example, potatoes. And this is very logical. Firstly, the quantity doubles, secondly, it gives a special tenderness to the dish, and, thirdly, no one will guess that there are potatoes in the composition at all, since they are not felt there at all.

In the same way, you can “hide” onions for those who don’t like them. Just grate it, the juiciness will remain, but the pieces themselves will not appear in the meatballs. These are such simple life hacks for parents of picky eating children.

We will need:

  • minced meat – 0.5 kg;
  • potatoes – 0.5 kg;
  • onions – 1 pc.;
  • egg - 1 pc.;
  • cream – 250 ml;

  • salt, pepper, spices.
